        Published recently in the journal diabetes learn according to a study, pregnant women often eat Fried food before, have a higher risk of gestational diabetes during pregnancy. 
 
        Researchers in the United States national institutes of health from 15027 to 15027 women single pregnancy data are analyzed, and the women aged 25 to 44 years old, from the nurses' health study II, the study started in 1989, is still in progress. 
 
        These women once every 2 years to accept the questionnaire survey, the questionnaire includes information such as their disease and way of life, such as smoking, drug use. Since 1991, the researchers also collect their diet information once every four years, including the intake of Fried foods at home or abroad, and use the food intake frequency questionnaires on the record. 
 
        In 10 years follow-up period, a total of 847 women who develop gestational diabetes. In adjusted for age, diet and the diet related factors, the researchers found that women with eating Fried food is less than 1 times a week, compared to eat Fried food 1 ~ 3 times a week, 4 ~ 6 and 7 times in half the risk of gestational diabetes mellitus are respectively 1.13, 1.31, and 2.18 times of the former. That is to say, if almost every day to eat Fried foods, the risk of gestational diabetes will be multiplied. Even after further correction weight index, the correlation is still there. 
 
        The researchers explained that Fried food is potential to increase the risk of gestational diabetes, may be to some of the harmful substances produced during the process of frying. 
 
        Fried by oxidation and hydrogenation make the chemical composition of oil change, and reduce the content of unsaturated fatty acid, the content of trans fatty acids increase at the same time. 
 
        The researchers conclude, the study suggests that women of childbearing age, if they limit the intake of Fried food, can reduce the risk of gestational diabetes. Still, further study is needed to confirm the findings, and explore the possible mechanism. (Cao Shufen)
